CUCUMBER GIN COCKTAIL
Fresh, cooling and thirst quenching, this is made for day drinking. Makes 2
1. using a vegetable peeler, shave 2 long, thin ribbons from 1 english cucumber; set aside. Cut a 10cm piece from remaining cucumber and coarsely chop. Muddle with 2 lemon wheels, 5 makrut lime leaves or four 5cm strips lime zest, and 2t raw sugar in a cocktail shaker. add 120ml gin and 30ml fresh lime juice and fill shaker with ice. Cover and shake until the outside of the shaker is frosty.
2. strain into 2 ice-filled tumblers. Top off each with club soda and gently stir to combine; garnish each with 2 reserved cucumber ribbons and a lemon wheel.
