CU­CUM­BER GIN COCK­TAIL

Fresh, cool­ing and thirst quench­ing, this is made for day drink­ing. Makes 2

1. us­ing a veg­etable peeler, shave 2 long, thin rib­bons from 1 english cu­cum­ber; set aside. Cut a 10cm piece from re­main­ing cu­cum­ber and coarsely chop. Mud­dle with 2 le­mon wheels, 5 makrut lime leaves or four 5cm strips lime zest, and 2t raw su­gar in a cock­tail shaker. add 120ml gin and 30ml fresh lime juice and fill shaker with ice. Cover and shake un­til the out­side of the shaker is frosty.

2. strain into 2 ice-filled tum­blers. Top off each with club soda and gen­tly stir to com­bine; garnish each with 2 re­served cu­cum­ber rib­bons and a le­mon wheel.
