Chef David Higgs and Gary Kyriacou’s latest venture is nothing like your grandma’s butcher store. Encased in dark wood and gleaming surfaces, the butchery stocks select cuts, both dry- and wet-aged, and speciality offerings, such as cured meats by charcutier Neil Jewell.
