Chef David Higgs and Gary Kyr­i­a­cou’s lat­est ven­ture is noth­ing like your grandma’s butcher store. En­cased in dark wood and gleam­ing sur­faces, the butch­ery stocks se­lect cuts, both dry- and wet-aged, and spe­cial­ity of­fer­ings, such as cured meats by char­cutier Neil Jewell.
