225ml mayonnaise 3T hot sriracha 1T soy sauce ½ lime, juiced Mix together the mayo, sriracha, soy sauce and lime juice. Add a dash of water if needed to get the right consistency. Keep refrigerated until ready to use.
3T soy sauce 3T sesame oil 1T light brown sugar Japanese 7 spice/ togarishi (available at Chilliesforafrica.com) Mix all the ingredients together. Serve. Tricky stuff, right?
LECHE DE TIGRE ( TIGER’S MILK)
½ garlic bulb ½ red onion 1 red chilli 110ml fresh lime juice (5 to 6 limes) 1 small bunch coriander 110ml honey 1T fresh ginger, peeled 225ml coconut milk Peel and roughly chop the garlic and onion. Slice the chilli lengthways and remove the seeds. Put the garlic, red onion, lime juice, coriander, chilli, honey, ginger and coconut milk in a blender, and blitz until you have a smooth texture. Pass the mixture through a sieve to finish.
450ml maple syrup 225ml soy sauce 110ml fresh lime juice (5 to 6 limes) 1T freshly grated ginger Whisk all the ingredients in a bowl. Yup – that’s it!
