Cheesy brin­jal bake

SERVES 4 PREPA­RA­TION: 10 MIN COOK­ING: 45 MIN

2 large brin­jals, thinly

sliced

15ml (1T) olive oil

SAUCE

1 onion, finely chopped

15ml (1T) oil

2 red chillies, chopped

2 gar­lic cloves, finely chopped 250g mush­rooms, sliced 2 cans (400g each) cherry

to­ma­toes salt and freshly ground black

pep­per

125ml (½c) grated moz­zarella

cheese

Pre­heat the oven to 200°C.

1 Brush the brin­jal slices with olive oil and grill on a hot grid­dle pan for 2 min­utes per side.

Set aside.

2 SAUCE Sauté the onion in an oiled pan un­til soft and translu­cent. Add the chillies, gar­lic and mush­rooms and fry un­til the mush­rooms are golden brown.

3 Add the re­main­ing in­gre­di­ents and sim­mer for 10 min­utes un­til the sauce has re­duced slightly. Sea­son with salt and pep­per.

4 Layer the grilled brin­jal slices with the sauce and cheese in an oven­proof dish.

5 Put the dish in the oven and bake for 20 min­utes un­til the cheese is melted and golden.
