Cheesy brinjal bake
SERVES 4 PREPARATION: 10 MIN COOKING: 45 MIN
2 large brinjals, thinly
15ml (1T) olive oil
1 onion, finely chopped
15ml (1T) oil
2 red chillies, chopped
2 garlic cloves, finely chopped 250g mushrooms, sliced 2 cans (400g each) cherry
tomatoes salt and freshly ground black
125ml (½c) grated mozzarella
Preheat the oven to 200°C.
1 Brush the brinjal slices with olive oil and grill on a hot griddle pan for 2 minutes per side.
2 SAUCE Sauté the onion in an oiled pan until soft and translucent. Add the chillies, garlic and mushrooms and fry until the mushrooms are golden brown.
3 Add the remaining ingredients and simmer for 10 minutes until the sauce has reduced slightly. Season with salt and pepper.
4 Layer the grilled brinjal slices with the sauce and cheese in an ovenproof dish.
5 Put the dish in the oven and bake for 20 minutes until the cheese is melted and golden.
