Bil­tong samp and beans

SERVES 6 PREPA­RA­TION: 10 MIN COOK­ING: 2 HR 40 MIN

2L (8c) wa­ter

500g samp-and-bean mix,

soaked overnight

1 onion, finely chopped 2 car­rots, chopped

2 pota­toes, chopped

1 can (400g) chopped to­ma­toes 1 can (400g) mush­room soup salt and pep­per

100g bil­tong pow­der

1 Put the wa­ter in a large pot over medium heat. Add the samp-and-bean mix and bring to the boil. Sim­mer for 2 hours un­til soft.

2 Add the onion, car­rots, pota­toes and to­ma­toes. Sim­mer for 30 min­utes or un­til soft. 3 Stir in the mush­room soup and sim­mer for another 10 min­utes. Re­move the pot from the heat and sea­son with salt and pep­per.

4 Fold in the bil­tong pow­der and leave to stand for 5 min­utes be­fore serv­ing.
