Pea and ham soup

SERVES 4 PREPARATIO­N: 10 MIN COOKING: 25 MIN

45ml (3T) butter

100g deli ham, cubed

1 onion, chopped

2 potatoes, peeled and cubed 1L (4c) chicken stock

500g frozen peas salt and pepper fresh rye bread, to serve

1 Heat the butter and fry the cubed ham in a pan for 1 minute. Remove and set aside. Fry the onion, add the potatoes and stir-fry briefly.

2 Pour in the stock and simmer until the potatoes are done.

3 Add the frozen peas and simmer for 5 more minutes. Purée until smooth with a stick blender or in a food processor.

4 Season with salt and pepper. Spoon the fried ham over the soup and serve with rye bread.
