MAKES 15 PREPARATION: 5 MIN COOKING: 15 MIN
500ml (2c) castor sugar 10ml (2t) cinnamon
500ml (2c) flour
10ml (2t) baking powder 5ml (1t) bicarbonate of soda 2,5ml (½t) nutmeg pinch of salt
250ml (1c) amasi
2 eggs, lightly beaten oil for deep-frying cinnamon sugar
1 Place 300ml castor sugar and half of the cinnamon in a medium bowl. Toss well to combine. Set aside.
2 In a large mixing bowl, sift together the flour, baking powder, bicarbonate of soda, nutmeg, salt and the remaining cinnamon. Stir the remaining castor sugar through.
3 Make a well in the centre of the mixture and add amasi and eggs. Stir until well combined.
4 Heat the oil in a pot over medium heat and carefully drop tablespoons of the mixture into the oil, turning occasionally until golden brown and cooked through.
5 Transfer the fritters with a slotted spoon to a plate lined with a paper towel.
6 Roll in cinnamon sugar to coat and serve.
