Pa­prika chicken with seared mealies

SERVES 4 PREPA­RA­TION: 15 MIN COOK­ING: 1 HR

Drum Food - - CONTENTS -

CHICKEN

4-6 chicken pieces salt and freshly ground black pep­per

20ml (4t) smoked pa­prika 15ml (1T) olive oil

MEALIES

4 sweet corn on the cob salt

2 red chillies, finely chopped 10g fresh co­rian­der, chopped

SAUCE

60ml (¼c) sour cream

15ml (1T) lime or lemon juice salt and freshly ground black pep­per

Pre­heat the oven to 200°C. Put a wire rack on a bak­ing sheet and grease with non-stick spray. 1 CHICKEN Sea­son the chicken with salt, pep­per and the pa­prika. Brush with the oil and ar­range on the wire rack. Roast for 1 hour or un­til done and crisp. 2 MEALIES Boil the mealies for 10 min­utes or un­til nearly done. Sear on a heated grid­dle pan or over hot coals. Sea­son with salt and scat­ter the chillies and co­rian­der on top.

3 SAUCE Mix the in­gre­di­ents. Driz­zle the sauce over the mealies and serve with the chicken.
