MAKES 24-30 MINI CHEESECAKES PREPARATION: 20 MIN BAKING: 40 MIN CRUST 2 packets (176g
each) Oreos FILLING 1 x batch of basic
filling Preheat the oven to 110°C.
1 CRUST Put cupcake liners in 24-30 hollows of a muffin pan and put a cookie in each.
2 FILLING Beat all the ingredients together. Break open the rest of the cookies and scrape off filling. Roughly chop the biscuits and mix into the cheesecake filling.
3 Spoon into the cupcake liners – the cookies will float to the top.
4 Bake for 40 minutes until the filling has set but is still slightly wobbly in the middle. Switch off the oven and leave cookies to cool inside.
