BOERE­WORS ROLLS WITH ­TOMATO AND ONION REL­ISH

SERVES 4-6 PREPARATION: 15 MIN COOK­ING: 30 MIN

REL­ISH 15ml (1T) oil 2 onions, thinly sliced 4 gar­lic cloves, crushed 1 chilli, chopped (­op­tional) 4 to­ma­toes, thinly sliced 60ml (¼c) each ­chut­ney, tomato sauce and light brown sugar 15ml (1T) Worces­ter­shire sauce salt and freshly ground pep­per ROLLS 4-6 hot dog rolls, slit open hor­i­zon­tally and ­but­tered in­side 500g boere­wors, ­braaied or fried and cut into 4-6 pieces 1 red onion, thinly

sliced 1 REL­ISH Heat the oil in a deep pan and fry the onion un­til soft. Add the gar­lic and chilli (if us­ing) and stir-fry un­til fra­grant. Add the to­ma­toes, stir­fry for a minute, then add the rest of the in­gre­di­ents ex­cept salt and pep­per. Sim­mer slowly for 10 min­utes, stir­ring oc­ca­sion­ally to pre­vent catch­ing. Sea­son with salt and pep­per.

2 ROLLS Put a piece of boere­wors in each roll, add onion slices and rel­ish and serve im­me­di­ately.
