BOEREWORS ROLLS WITH TOMATO AND ONION RELISH
SERVES 4-6 PREPARATION: 15 MIN COOKING: 30 MIN
RELISH 15ml (1T) oil 2 onions, thinly sliced 4 garlic cloves, crushed 1 chilli, chopped (optional) 4 tomatoes, thinly sliced 60ml (¼c) each chutney, tomato sauce and light brown sugar 15ml (1T) Worcestershire sauce salt and freshly ground pepper ROLLS 4-6 hot dog rolls, slit open horizontally and buttered inside 500g boerewors, braaied or fried and cut into 4-6 pieces 1 red onion, thinly
sliced 1 RELISH Heat the oil in a deep pan and fry the onion until soft. Add the garlic and chilli (if using) and stir-fry until fragrant. Add the tomatoes, stirfry for a minute, then add the rest of the ingredients except salt and pepper. Simmer slowly for 10 minutes, stirring occasionally to prevent catching. Season with salt and pepper.
2 ROLLS Put a piece of boerewors in each roll, add onion slices and relish and serve immediately.
