CHICKEN AND CELERY SALAD WITH GREEN GRAPES
PREPARATION: 15 MIN COOKING: 35-40 MIN
3 chicken breasts, including skin and bones salt
15ml (1T) olive oil SALAD
1 head of lettuce,
1 bunch of celery, chopped (leaves included) 250g seedless green grapes, halved
60ml (¼c) sunflower seeds, toasted DRESSING
60ml (¼c) mayonnaise
60ml (¼c) plain yoghurt
2,5ml (½t) roasted masala
15ml (1T) lemon juice
Preheat the oven to 190°C. Grease a baking sheet with nonstick spray.
1 Season the chicken with salt and arrange on the prepared baking sheet. Drizzle the oil over and roast for 35-40 minutes until done. Set aside to cool.
2 Remove the chicken from the bone then slice or shred.
3 SALAD Mix everything well in a mixing bowl.
4 DRESSING Mix all the ingredients well and season with salt. Pour the dressing over the salad and mix lightly.
5 Spread the salad on a platter and arrange the chicken on top.
