Preheat the oven to 180ºC. Crush 2 cloves garlic and finely chop a 7cm knob of ginger and combine with ¼ cup honey,
cup soy sauce and the juice of half a lemon. Pour this marinade over 500g cleaned and halved portabellini mushrooms that you’ve placed on a baking tray. Toss to coat, then bake for 20 minutes, tossing from time to time. Arrange some pak choi on a platter, top with warm mushrooms and juices, and sprinkle with sesame seeds. Serve warm, garnished with sliced red chilli and micro greens.
