Pre­heat the oven to 180ºC. Crush 2 cloves gar­lic and finely chop a 7cm knob of ginger and com­bine with ¼ cup honey,

cup soy sauce and the juice of half a lemon. Pour this mari­nade over 500g cleaned and halved porta­bellini mush­rooms that you’ve placed on a bak­ing tray. Toss to coat, then bake for 20 min­utes, toss­ing from time to time. Ar­range some pak choi on a plat­ter, top with warm mush­rooms and juices, and sprin­kle with sesame seeds. Serve warm, gar­nished with sliced red chilli and mi­cro greens.
