MARINATING OIL FOR ROAST VEGETABLES
This recipe makes 1 litre of marinade, but the quantity of marinade you need will depend on the amount of vegetables you will be roasting. The marinating oil need only coat the vegetables, giving them a protective layer and adding flavour. This marinade can also be used for roasting meat of any kind. • 4 cups olive oil/sunflower oil • 50g thyme, chopped with stem
• 20g rosemary, chopped
with stem • 8 whole chillies 8 garlic cloves Fill a glass container or jar with the oil, thyme, rosemary, chilli and garlic, and store in the fridge until needed. This should keep for at least two weeks.
