MAR­I­NAT­ING OIL FOR ROAST VEG­ETA­BLES

This recipe makes 1 litre of mari­nade, but the quan­tity of mari­nade you need will de­pend on the amount of veg­eta­bles you will be roast­ing. The mar­i­nat­ing oil need only coat the veg­eta­bles, giv­ing them a pro­tec­tive layer and adding flavour. This mari­nade can also be used for roast­ing meat of any kind. • 4 cups olive oil/sun­flower oil • 50g thyme, chopped with stem

• 20g rose­mary, chopped

with stem • 8 whole chill­ies 8 gar­lic cloves Fill a glass con­tainer or jar with the oil, thyme, rose­mary, chilli and gar­lic, and store in the fridge un­til needed. This should keep for at least two weeks.
