The an­nual con­tri­bu­tion by bil­tong to the South African econ­omy, ac­cord­ing to re­search by the North-West Uni­ver­sity. Beef bil­tong con­trib­utes nearly R2.5bn, with veni­son ac­count­ing for the re­main­der. The gov­ern­ment should ob­tain pro­tec­tion for the name bil­tong, sim­i­lar to what was done with rooi­bos, it said. There is an op­por­tu­nity to grow veni­son ex­ports in par­tic­u­lar, the re­searchers said.
