The annual contribution by biltong to the South African economy, according to research by the North-West University. Beef biltong contributes nearly R2.5bn, with venison accounting for the remainder. The government should obtain protection for the name biltong, similar to what was done with rooibos, it said. There is an opportunity to grow venison exports in particular, the researchers said.
