Heat the peanut oil in a pot on the stove. Clean the prawns by re­mov­ing their heads and shells, leav­ing the tails. Then de­vein with a sharp knife by mak­ing a small cut on the up­per part of the flesh and pulling out the vein. Clean and de­vein the scampi, and gut the an­chovies by cut­ting them in half and re­mov­ing the bones. Try to leave the tail. Clean the squid and cut into 1cm rings, leav­ing the curls. Drench ev­ery­thing in flour and strain to re­move any ex­cess. Fry im­me­di­ately in very hot peanut oil for a few min­utes un­til golden and crunchy, then drain on roller towel. Sea­son with salt and serve with lemon wedges.
