Heat the peanut oil in a pot on the stove. Clean the prawns by removing their heads and shells, leaving the tails. Then devein with a sharp knife by making a small cut on the upper part of the flesh and pulling out the vein. Clean and devein the scampi, and gut the anchovies by cutting them in half and removing the bones. Try to leave the tail. Clean the squid and cut into 1cm rings, leaving the curls. Drench everything in flour and strain to remove any excess. Fry immediately in very hot peanut oil for a few minutes until golden and crunchy, then drain on roller towel. Season with salt and serve with lemon wedges.
