Boerewors coil with to­mato smoor

1kg boerewors Wooden skew­ers, soaked for 15 min­utes in cold wa­ter 2 onions, halved 1 red pep­per, de­seeded and halved Bread rolls, to serve

FOR THE TO­MATO SMOOR

45ml olive oil 1 large onion, chopped 1 x 410g tin toma­toes 15g sugar Salt Freshly ground black pep­per Coil the boerewors into a spi­ral. Place two wooden skew­ers through the sausage to se­cure it.

To make the smoor, heat the olive oil in a pan and fry the onions un­til soft. Add the toma­toes and cook over a low heat for 20 min­utes, break­ing the to­mato with a wooden spoon as it cooks. Add the sugar, and sea­son with salt and black pep­per. Take it off the heat.

Braai the boerewors coil over a medium-low heat un­til brown un­der­neath. Turn it over and braai un­til ready.

Braai the onions and red pep­per along­side the boerewors coil.

Serve with but­tered rolls and the to­mato smoor.
