Smoked ham and bean soup
SMOKED HAM AND BEAN SOUP Take the heat
The perfect soup if you’ve just arrived somewhere and need to dish up something hot quickly.
(enough for 4)
4 kassler steaks, cut into blocks
4 tablespoons butter 1 onion, diced
1 large carrot, peeled and finely chopped
2 celery ribbons, finely chopped
2 cans (410 g each) butter beans or cannellini beans, drained and rinsed
1 ℓ chicken stock salt and pepper, to taste
1 Braai the kassler blocks in half of the butter until cooked through and crisp. Remove the meat from the pot.
2 Add the onion, carrot and celery to the same pot with the rest of the butter and cook until soft.
3 Stir in the beans, stock and the blocks of meat and leave the soup to simmer for 15 minutes.
4 Mush the soup with a fork or the back of a wooden spoon and flavour to taste with salt and pepper. Serve with fresh bread and parsley.
