Chicken and avocado burgers

The avocado makes these burgers extra juicy, with added healthy fats. I like serving them with a fresh salsa of mango, chilli and red onion – the sweet tropical flavours work exceptiona­lly well with the chicken and avo. • 500g boneless chicken • 1 large avocado • 1 garlic clove, finely grated • cup (80ml) bread crumbs • 1 jalapeño chilli, finely chopped • ½ teaspoon (2,5ml) ground cumin • ½ teaspoon (2,5ml) salt • freshly ground black pepper to taste • fried bacon, cubes of fresh mango and pistachio-pesto sauce (see previous page) to serve
