Fast sweet-sour pickle

Makes about 500ml Prepa­ra­tion time 10 min­utes Cook­ing time 5 min­utes

This fast pickle is a great way to use ex­tra gar­lic and onions – you can eat it right away or store it in the fridge for up to a month to en­joy with just about any­thing!

You need

• 10 gar­lic cloves • 6 small onions • 4 ser­rano or jalapeño chill­ies • ½ cup (125ml) white-wine vine­gar • 1/3 cup (80ml) brown sugar • ½ cup (125ml) wa­ter • 1 ta­ble­spoon (15ml) salt

This is how

Peel the gar­lic cloves (fol­low the same method de­scribed in the red cir­cle below) and slice them thinly. Quar­ter the onions length­wise and slice the chill­ies into rings. Ar­range ev­ery­thing in a jar.

Heat the vine­gar, brown sugar, wa­ter and salt to boil­ing point and pour the boil­ing liq­uid over the veg­eta­bles in the jar. Cover with the lid and al­low to cool to­tally be­fore
