Rasp­berry lemon­ade

This recipe is re­ally easy and can be made with fresh or frozen berries. It’ll be a hit with your guests but you could also pour the lemon­ade into a beau­ti­ful bot­tle, tie a rib­bon around it and give it to the host of the next din­ner party you’re in­vited to.

You need

• 400g fresh or frozen rasp­ber­ries • juice of 2 lemons • 1 cup (250ml) wa­ter • 1 cup (250ml) sugar

This is how

Blend the rasp­ber­ries, lemon juice and wa­ter in a food pro­ces­sor and strain. Dis­card the seeds. Heat the liq­uid along with the sugar in a saucepan over a medium heat for 10 min­utes un­til the sugar dis­solves. Let the mix­ture sim­mer for a few min­utes and set it aside to cool down, then re­frig­er­ate un­til ice cold. Serve with soda wa­ter to taste, plus ice and mint leaves.
