Basil ice cream

Makes 1ℓ Prepa­ra­tion time 30 min­utes plus cool­ing time

This ice cream is made with yo­ghurt, which cre­ates a lovely light re­sult. The method is based on a recipe by Max Falkowitz.

You need

• 1 large bunch sweet-basil leaves • ½ cup (125ml) sugar • ½ tea­spoon (2,5ml) lime zest • juice of 1 lime • 2 cups (500ml) full-cream yo­ghurt • a pinch of kosher salt
