Basil ice cream
Makes 1ℓ Preparation time 30 minutes plus cooling time
This ice cream is made with yoghurt, which creates a lovely light result. The method is based on a recipe by Max Falkowitz.
• 1 large bunch sweet-basil leaves • ½ cup (125ml) sugar • ½ teaspoon (2,5ml) lime zest • juice of 1 lime • 2 cups (500ml) full-cream yoghurt • a pinch of kosher salt
