In a food pro­ces­sor, pulse 3 cups cake flour, 1½ tbsp su­gar and 1 tsp in­stant yeast. With ma­chine run­ning, driz­zle in 1 cup plus 2 tbsp warm wa­ter un­til com­bined. Add 1 tbsp olive oil and 1½ tsp salt. Process un­til dough forms a ball; trans­fer to a lightly oiled large bowl. With lightly oiled hands, knead for 1 minute. Form into a ball; driz­zle with 2 tsp olive oil, rub­bing to coat sur­face. Cover tightly with cling­film; re­frig­er­ate for at least 1 day or up to 3 days. Let stand at room tem­per­a­ture for 1 hour be­fore us­ing. Makes 1 (600g) ball.
