1 Clean­ing a cast-iron pan with a hand­ful of salt re­moves de­bris but keeps the es­sen­tial sea­son­ing in­tact.

2 A pinch of salt thrown into the pan when sweat­ing onions on a low heat will pre­vent them from burn­ing.

3 Serve shucked oys­ters or dev­illed eggs on a bed of coarse salt. This pre­vents them from tip­ping over and if a lit­tle is in­gested it doesn’t in­ter­fere with the flavours.
