Spiced-Pa­neer Bur­rito

Pa­neer is a firm In­dian cheese that takes on spices beau­ti­fully. Serves 4

230g pa­neer cheese 2 tbsp tikka masala curry paste 500g ready-made flavoured rice (for ex­am­ple 2 x 250g pouches Wool­worths Heat & Eat Breyani Rice) 4 large flour tor­tilla wraps 150g plain yo­ghurt large bunch co­rian­der, chopped 2 mint sprigs, leaves chopped 100g baby spinach 4 heaped tbsp mango or other chut­ney

1. Cut pa­neer into strips and place in a bowl with the curry paste and some sea­son­ing; stir to coat. 2. Heat a large fry­ing pan over a high heat. Add sea­soned pa­neer strips in one layer and fry for a cou­ple of min­utes each side, un­til golden. 3. Mean­while, heat the rice. 4. Bring pa­neer, wraps, rice, yo­ghurt, herbs, spinach and chut­ney to the ta­ble and let peo­ple as­sem­ble their bur­ri­tos them­selves.
