Paneer is a firm Indian cheese that takes on spices beautifully. Serves 4
230g paneer cheese 2 tbsp tikka masala curry paste 500g ready-made flavoured rice (for example 2 x 250g pouches Woolworths Heat & Eat Breyani Rice) 4 large flour tortilla wraps 150g plain yoghurt large bunch coriander, chopped 2 mint sprigs, leaves chopped 100g baby spinach 4 heaped tbsp mango or other chutney
1. Cut paneer into strips and place in a bowl with the curry paste and some seasoning; stir to coat. 2. Heat a large frying pan over a high heat. Add seasoned paneer strips in one layer and fry for a couple of minutes each side, until golden. 3. Meanwhile, heat the rice. 4. Bring paneer, wraps, rice, yoghurt, herbs, spinach and chutney to the table and let people assemble their burritos themselves.
