Sim­ple Sausage Pasta

If you like, form the sausage meat into proper meat­balls. Serves 4

350g dried fusilli 1 tbsp olive oil 400g sausages 1 red onion, chopped 1 red pep­per, de­seeded and sliced 1 gar­lic clove, crushed 400g can chopped toma­toes hand­ful fresh basil, chopped 1. Bring a large pot of salted wa­ter to the boil and cook pasta ac­cord­ing to in­struc­tions on pack­ag­ing. 2. Mean­while, heat oil in a large deep fry­ing pan over a high heat. Squeeze sausage meat out of the skins in chunks straight into the pan. (Dis­card skins.) Cook for 3 min­utes, stir­ring of­ten, un­til browned. 3. Add onion and pep­per to the sausage pan and cook for 5 min­utes. Stir in gar­lic and cook for 1 minute, then add toma­toes and some sea­son­ing. Bring to the boil, re­duce heat and sim­mer for 5 min­utes. 4. When pasta is ready, drain and tip into sausage pan with the basil. Toss ev­ery­thing to­gether, check sea­son­ing and serve.
