Simple Sausage Pasta
If you like, form the sausage meat into proper meatballs. Serves 4
350g dried fusilli 1 tbsp olive oil 400g sausages 1 red onion, chopped 1 red pepper, deseeded and sliced 1 garlic clove, crushed 400g can chopped tomatoes handful fresh basil, chopped 1. Bring a large pot of salted water to the boil and cook pasta according to instructions on packaging. 2. Meanwhile, heat oil in a large deep frying pan over a high heat. Squeeze sausage meat out of the skins in chunks straight into the pan. (Discard skins.) Cook for 3 minutes, stirring often, until browned. 3. Add onion and pepper to the sausage pan and cook for 5 minutes. Stir in garlic and cook for 1 minute, then add tomatoes and some seasoning. Bring to the boil, reduce heat and simmer for 5 minutes. 4. When pasta is ready, drain and tip into sausage pan with the basil. Toss everything together, check seasoning and serve.
