Tired of fruit cake and heavy, baked Christ­mas pud? Ap­ple roses are so haute right now and the per­fect al­ter­na­tive for a light dessert on a hot sum­mer’s day. The added bonus is that the roses can be made well in ad­vance. Choose

12 glossy red ap­ples, slice thinly with a man­do­line and place in a deep bowl with cup each of orange juice, su­gar and melted but­ter. Steep for ten min­utes, then gen­tly roll and fold the slices and place in a muf­fin tray to keep their shape. Re­frig­er­ate un­til ready to use. See Ap­ple Rose Cake recipe on page 8
