HOW to FREEZE DRY
1. Wash, dry and process the fruit in a blender. 2. Place purée in freezer bags, laid down flat. Press out any air before sealing the bags. 3. Place the bags, laid down flat in a cooler, and cover with dry ice (be sure to wear gloves and long sleeves).
4. Place the cooler, lid off, in a deep freezer. After six hours, cover the cooler with the lid. After 24 hours, the dry ice should all be gone, which means it’s ready. 5. Blend the freezedried purée to a fine powder.
