The fresh faced Dane oc­cu­pied a tight cor­ner in a co­op­er­a­tive space on Wood­stock’s bustling Al­bert Road be­fore mov­ing to pop­u­lar Bree Street. Beatrice ra­di­ates good health and en­ergy, so it’s not dif­fi­cult to see why lo­cals have been easy con­verts to her food.

‘I’m mak­ing raw food more in­ter­est­ing,’ she says. ‘Less hip­pie, less brown, less weird.’ Beatrice ex­plains that there are no grains in her es­tab­lish­ment as they are used to fat­ten up an­i­mals, as well as no gluten and no dairy.
