Ask your butcher to debone and but­ter­fly the leg of lamb. You are look­ing for about 1,2kg bone-out weight. Re­mind him to re­move the lit­tle gland from the fleshy bit on top of the leg, as this im­parts an un­pleas­ant flavour to the meat.
