Baked mince and potato

Un­der R105 • Serves 4 • Prepa­ra­tion time: 15 min­utes Cook­ing time: 30 min­utes • Oven tem­per­a­ture: 200°C

• 750g frozen potato wedges • 15ml olive oil • 1 onion, chopped • 350g mince • 1 red pep­per, chopped • 15ml tomato paste • 2 rounds feta, crum­bled • sriracha sauce and fresh basil

1 Pre­heat the oven. Ar­range the potato wedges in a greased oven­proof dish, sea­son with salt and pep­per and bake for 20 min­utes.

2 Mean­while, heat the oil and fry the onion un­til glossy. Add the mince and fry un­til golden brown (break up the meat con­tin­u­ously with a spat­ula un­til crumbly). Add the red pep­per, salt and pep­per to taste, fol­lowed by the tomato paste and a dash of wa­ter. Sim­mer for 15 min­utes.

3 Turn the cooked potato wedges over once and spoon the mince on top, fol­lowed by the cheese. Bake for a fur­ther 10 min­utes. Serve with sriracha sauce and basil.
