Baked mince and potato

• 750g frozen potato wedges • 15ml olive oil • 1 onion, chopped • 350g mince • 1 red pepper, chopped • 15ml tomato paste • 2 rounds feta, crumbled • sriracha sauce and fresh basil
1 Preheat the oven. Arrange the potato wedges in a greased ovenproof dish, season with salt and pepper and bake for 20 minutes.
2 Meanwhile, heat the oil and fry the onion until glossy. Add the mince and fry until golden brown (break up the meat continuously with a spatula until crumbly). Add the red pepper, salt and pepper to taste, followed by the tomato paste and a dash of water. Simmer for 15 minutes.
3 Turn the cooked potato wedges over once and spoon the mince on top, followed by the cheese. Bake for a further 10 minutes. Serve with sriracha sauce and basil.
