Sub­sti­tute the le­mon juice with 125ml freshly squeezed or­ange

juice. Stir 30ml cold wa­ter into 15ml gela­tine pow­der in a bowl and leave un­til set. Melt by plac­ing the bowl in a larger bowl of boil­ing wa­ter and stir­ring gen­tly un­til runny. Beat this into the fill­ing mix­ture and di­vide in half, then whisk 100g melted dark

choco­late into one half. Now add spoon­fuls of the two colours to the tart crust, ran­domly, and use a wooden skewer to blend the colours to­gether in a mar­ble pat­tern. * This fill­ing makes a lit­tle more than the other recipes be­cause of the ad­di­tions.
