250g good-qual­ity

dark cho­co­late 250g un­salted but­ter 5 large eggs 5 large egg yolks 125g caster sugar a pinch of salt 35g mealie meal

Serves 6

Pre­heat the oven to 250°C and lib­er­ally grease six dar­i­ole moulds. Melt the cho­co­late and but­ter to­gether over a dou­ble boiler. In a sep­a­rate bowl, vig­or­ously stir the eggs, egg yolks and caster sugar to­gether un­til the sugar has al­most dis­solved, but do not whisk or in­cor­po­rate any air. Once the cho­co­late and but­ter have melted, grad­u­ally stir them into the egg mix­ture, with­out beat­ing. Sift in the salt and mealie meal and gen­tly mix to in­cor­po­rate. Fill the pre­pared moulds three quar­ters full and bake for seven min­utes. Serve im­me­di­ately with a scoop of vanilla ice cream.
