CHOCOLATE MEALIE MEAL PUDDING

dark chocolate 250g unsalted butter 5 large eggs 5 large egg yolks 125g caster sugar a pinch of salt 35g mealie meal
Preheat the oven to 250°C and liberally grease six dariole moulds. Melt the chocolate and butter together over a double boiler. In a separate bowl, vigorously stir the eggs, egg yolks and caster sugar together until the sugar has almost dissolved, but do not whisk or incorporate any air. Once the chocolate and butter have melted, gradually stir them into the egg mixture, without beating. Sift in the salt and mealie meal and gently mix to incorporate. Fill the prepared moulds three quarters full and bake for seven minutes. Serve immediately with a scoop of vanilla ice cream.
