CHORIZO OR SALAMI STEW SERVES 2

LOSE IT! - - Out & About -

Pack salami or chorizo and small sa­chets of tomato paste and spices in a bag or tin­foil. Pack the vegetables you in­tend to use sep­a­rately.

YOU’LL NEED:

1 tbsp co­conut oil 1 onion, chopped 1 clove garlic, crushed 3 cel­ery sticks, sliced 200g chorizo or beef salami, diced 3 cour­gettes, roughly sliced 300g chopped pump­kin 2 tbsp tomato paste 1 cup home­made beef stock

1. To make: Heat a medium -sized pot, add co­conut oil, fry onion, garlic and cel­ery un­til golden. Add chorizo and fry for 5 min. Add re­main­ing in­gre­di­ents and sim­mer for about 20 min or un­til thick­ened. Sea­son well.

2. To serve: Heat over warm coals and en­joy while hot.
