CHORIZO OR SALAMI STEW SERVES 2
Pack salami or chorizo and small sachets of tomato paste and spices in a bag or tinfoil. Pack the vegetables you intend to use separately.
1 tbsp coconut oil 1 onion, chopped 1 clove garlic, crushed 3 celery sticks, sliced 200g chorizo or beef salami, diced 3 courgettes, roughly sliced 300g chopped pumpkin 2 tbsp tomato paste 1 cup homemade beef stock
1. To make: Heat a medium -sized pot, add coconut oil, fry onion, garlic and celery until golden. Add chorizo and fry for 5 min. Add remaining ingredients and simmer for about 20 min or until thickened. Season well.
2. To serve: Heat over warm coals and enjoy while hot.
