BREAK­FAST COCONUTWATER SMOOTHIE

SERVES 2 1½ cups co­conut wa­ter, chilled ½ cup wa­ter, chilled 2 av­o­ca­dos, peeled and chopped 30g spinach leaves, chopped 1 tsp fresh gin­ger, chopped juice of 1 lime fresh co­conut, grated, to serve 1. Place all the in­gre­di­ents ex­cept the grated co­conut in a blender and blitz un­til the mix­ture is smooth. 2. Pour the smoothie into 2 glasses and top with fresh grated co­conut. Serve im­me­di­ately. ■
