LIME AND BLUE­BERRY TARTS

FOR THE BASE

2 tsp co­coa pow­der, dis­solved in a lit­tle warm wa­ter 80g 80% dark choco­late, melted 2 cups des­ic­cated co­conut 1 egg white, beaten

FOR THE FILL­ING

1 cup dou­ble cream ½ cup crème fraîche grated zest and juice of 2 limes pinch of ste­via pow­der

TO SERVE

80g blue­ber­ries lime peel, to gar­nish

1. For the base: Place all the in­gre­di­ents in a small bowl, stir to com­bine, then press the mix­ture into four 12cm loose-base tart tins. 2. For the fill­ing: Stir all the in­gre­di­ents in a bowl and then spoon it into the pre­pared bases. Re­frig­er­ate un­til the fill­ing has set. 3. To serve: Top the tarts with blue­ber­ries and lime peel. Serve chilled.
