'THE EMPEROR CAN WAIT...'

Marie Claire (South Africa) - - FOOD -

the first and probably best known Mandarin restaurant in Johannesburg, Red Chamber in Hyde Park has been in existence for almost 25 years, with chef-patron Emma Chen at the helm. Her appreciative regulars first discovered the cosy yet glam space years ago and then spread the word: Red Chamber was the place for superb Chinese food (no fusion here), served with old-school courtesy and style.

To ensure its continuing longevity, it’s recently moved to a more accessible, larger spot within its Hyde Park Corner home, but nothing else has changed. Emma believes in a classic rather than trendy menu, noting that Peking Duck is one of the Chamber’s signature dishes. She makes her own pastries – for the spring rolls, noodles and pancakes – and most of the sauces, all (firmly) without MSG.

Here she graciously shares some of her favourite recipes with us – which affirm the truth of the popular Chinese saying, ‘The Emperor can wait while we eat.’
