the first and prob­a­bly best known Man­darin res­tau­rant in Jo­han­nes­burg, Red Cham­ber in Hyde Park has been in ex­is­tence for al­most 25 years, with chef-pa­tron Emma Chen at the helm. Her ap­pre­cia­tive reg­u­lars first dis­cov­ered the cosy yet glam space years ago and then spread the word: Red Cham­ber was the place for su­perb Chi­nese food (no fu­sion here), served with old-school courtesy and style.

To en­sure its con­tin­u­ing longevity, it’s re­cently moved to a more ac­ces­si­ble, larger spot within its Hyde Park Cor­ner home, but noth­ing else has changed. Emma be­lieves in a clas­sic rather than trendy menu, not­ing that Pek­ing Duck is one of the Cham­ber’s sig­na­ture dishes. She makes her own pas­tries – for the spring rolls, noo­dles and pan­cakes – and most of the sauces, all (firmly) with­out MSG.

Here she gra­ciously shares some of her favourite recipes with us – which af­firm the truth of the pop­u­lar Chi­nese say­ing, ‘The Em­peror can wait while we eat.’
