HEALTHY CHEESE TOASTIES

Serves 4 WHAT YOU’LL NEED
8 SLICES LOW- GI BREAD, TOASTED
1 PACKET OF ROCKET
WHITE BALSAMIC VINEGAR
150G MATURE CHEDDAR CHEESE
3 TOMATOES, SLICED
SALT AND BLACK PEPPER
Toasted cheese is a winter winner – and, if you do it right, won’t add unnecessary calories to your waistline. Toss the rocket in a little olive oil and balsamic vinegar and pile onto four pieces of toast; set aside. Divide the tomato among the remaining toast and grate the cheddar over. Season well and grill until melted and bubbly. Place onto the rocket toasties, slice and serve immediately.
Go for vintage or mature cheddar, the sharper the better. This way you get all the flavour, in half the calorie count.
