Strapped for time? This quick-me-up won’t skimp on nu­tri­ents.

Serves 4 WHAT YOU’LL NEED

8 SLICES LOW- GI BREAD, TOASTED

1 PACKET OF ROCKET

OLIVE OIL

WHITE BAL­SAMIC VINE­GAR

150G MA­TURE CHED­DAR CHEESE

3 TOMA­TOES, SLICED

SALT AND BLACK PEP­PER

METHOD

Toasted cheese is a win­ter winner – and, if you do it right, won’t add un­nec­es­sary calo­ries to your waist­line. Toss the rocket in a lit­tle olive oil and bal­samic vine­gar and pile onto four pieces of toast; set aside. Di­vide the tomato among the re­main­ing toast and grate the ched­dar over. Sea­son well and grill un­til melted and bub­bly. Place onto the rocket toasties, slice and serve im­me­di­ately.

NOTE

Go for vin­tage or ma­ture ched­dar, the sharper the bet­ter. This way you get all the flavour, in half the calo­rie count.
