Herbal Dum-Ka Chicken
You’ve heard us banging on about the metabolism-boosting benefits of chillies before. Well, this recipe really turns up the heat. These high-capsicum peppers will make you sweat, but embrace it: that’s just your belly fat searing.
INGREDIENTS ( SERVES 4) • ONIONS, 2, CHOPPED • CORIANDER, 2 BUNCHES, CHOPPED • MINT LEAVES, BUNCH • BASIL LEAVES, ½ BUNCH • GREEN CHILLIES, 6 • OLIVE OIL, SPLASH • GINGER GARLIC PASTE, 1TBSP • CHICKEN DRUMSTICKS, 500G • TURMERIC, ½ TSP • GARAM MASALA, ½ TSP • BLACK PEPPER POWDER, ½ TSP
01/ You can’t start a fire without a spark, and in this instance your first move is to fry the LDL cholesterol-lowering onions. Once they’ve turned nice and crispy, set them to one side.
02/ Next, grind the fresh herbs and chillies along with a pinch of salt into a fine paste – this alone will provide you with an arm workout. Heat some oil in a saucepan before bunging in the ginger garlic paste (either buy it in a jar or simply blitz the two together). Stir until it begins to brown, then introduce the drumsticks to the mix and fry for about 10min.
03/ Add the coriander paste to the fried meat, along with the turmeric powder (linked to better brain function) and cook for about 5min before adding a cup of water, masala powder, black pepper and fried onions. Leave to simmer for 20min, then plate it up. It beats the hell out of a stint on the treadmill.
