Sautéed Chicken with Kimchi
What You’ll Need 1 Tbsp olive oil 2 garlic cloves, minced ¼ medium onion, diced 1 thumb-size piece of ginger, peeled and minced 1 jalapeño, thinly sliced 2 boneless, skinless chicken thighs, cubed 1 cup store-bought kimchi ⅓ cup white rice, cooked Sesame seeds and nori
HOW TO MAKE IT
1. In a large nonstick pan, heat the olive oil on medium. Add the garlic, onion, ginger, jalapeño, and chicken. Cook until the thighs are almost cooked through, about 5 minutes.
2. Add the kimchi and simmer until the sauce thickens and the chicken is cooked through and glazed, about 5 minutes.
3. Serve the chicken mixture over the rice and top with sesame seeds and nori. Serves 1
