What You’ll Need: Salad ¼ head Ice­berg let­tuce ¼ cup Edamame beans ¼ cup peas ¼ cooked quinoa ¼ cup fennel con­fit 1 scoop cu­cum­ber in­sides 1 hand­ful cau­li­flower 1 Tbsp pomegranates What You’ll Need: Dress­ing 75g Co­rian­der 10g Maple syrup 20g Cham­pagne vine­gar 25g Di­jon mus­tard 15g white bal­samic 10g Ap­ple juice 100g Olive oil 3g Salt HOW TO MAKE IT This is a su­per-sim­ple, bant­ing-friendly salad that takes min­utes to make (pro­vided you’ve grilled your cau­li­flower be­fore­hand, un­til it’s but­tery).

1. Com­bine your dress­ing in­gre­di­ents and whip un­til thor­oughly mixed.

2. Toss your su­per salad in­gre­di­ents through the dress­ing, and serve with your choice of well-sea­soned, well­cooked lean pro­tein.
