What You’ll Need: Salad ¼ head Iceberg lettuce ¼ cup Edamame beans ¼ cup peas ¼ cooked quinoa ¼ cup fennel confit 1 scoop cucumber insides 1 handful cauliflower 1 Tbsp pomegranates What You’ll Need: Dressing 75g Coriander 10g Maple syrup 20g Champagne vinegar 25g Dijon mustard 15g white balsamic 10g Apple juice 100g Olive oil 3g Salt HOW TO MAKE IT This is a super-simple, banting-friendly salad that takes minutes to make (provided you’ve grilled your cauliflower beforehand, until it’s buttery).
1. Combine your dressing ingredients and whip until thoroughly mixed.
2. Toss your super salad ingredients through the dressing, and serve with your choice of well-seasoned, wellcooked lean protein.
