AAt the The Test Kitchen, he’s con­stantly tast­ing food and wine to make sure guests – many who’ve had to book months in ad­vance to se­cure a ta­ble at the pop­u­lar eatery – are sip­ping on vino that com­ple­ments and en­hances the ex­per­i­men­tal dishes be­ing fer­ried from the kitchen. It’s a full-time job that leaves lit­tle breath­ing room to rush off to the gym and back again. His per­fect pair­ing: body­weight moves and killer car­dio. “My guilty con­science usu­ally kicks in when I’ve been gorg­ing on food in the kitchen,” he laughs. “Also, I just seem to love put­ting my body through pain.” Dur­ing a typ­i­cal week he’ll fin­ish two 10km runs, com­plet­ing a series of shorter sprints on his tread­mill at home. He keeps his strength rou­tine sim­ple, with a series of body­weight sta­ples. His se­cret weapon: the wine. Anec­do­tally: “It’s a way to de­stress and en­joy my food more.”
