Blueberry Banana Pancakes
1. Cook Orgran pancake mix per directions. (Blend or whisk 1 cup mix with 1 cup cold water; don’t overblend. For best results, use the batter within 15 minutes.) Stir in ½ cup frozen blueberries.
2. To a lightly oiled pan (or solid stove plate) on medium heat, add ¼ cup batter per pancake. When bubbles appear, about 1 minute, flip and cook until the undersides are golden brown, another 30 seconds or so.
3. Plate with chopped walnuts and sliced banana. Serve with Terbodore
coffee. Makes six 7cm flapjacks.
