GREEN BEAN, MUSHROOM AND CARROT MEDLEY
■ 500g fresh green beans, cut in half ■ 2 carrots, cut into thick strips ( julienned) ■ 65g (¼ cup) butter ■ 1 onion, sliced into half rings ■ 5ml (1 teaspoon) crushed garlic ■ 250g button mushrooms, sliced ■ Salt and white pepper ■ 5ml (1 teaspoon) lemon pepper
Place green beans and carrots in a little boiling water. Cover and cook until tender but still firm. Drain. Melt butter in a large frying pan over medium heat. Saute onions, garlic and mushrooms until almost tender. Reduce heat and cook for three minutes. Stir in green beans and carrots mixture and season with salt, white pepper and lemon pepper. Cover and cook for five minutes over medium heat.
