CHOC-MINT SELF SAUCING PUDDING
1 box (500g) chocolate cake mix 3 extra eggs 250ml (1 cup) oil 250ml (1 cup) hot coffee
500ml (2 cups) boiling water 100g (½ cup) brown sugar 30ml (2 tablespoons) cocoa powder 5ml (1 teaspoon) vanilla essence Milk chocolate for topping, optional
Preheat oven to 180°C. Grease a deep 2 litre ovenproof oven dish. Mix together chocolate cake mix, eggs, oil and hot coffee. Spoon mixture into prepared baking dish and smooth the top.
Make the syrup by mixing together boiling water, sugar, cocoa and vanilla. Stir until sugar has dissolved. Pour syrup over dough, bake in oven for 45 minutes. Sprinkle with grated chocolate if desired.
Serve hot with whipped cream or vanilla ice cream. Decorate with fresh strawberries.
