CHOC-MINT SELF SAUCING PUD­DING

IN­GRE­DI­ENTS Cake:

1 box (500g) choco­late cake mix 3 ex­tra eggs 250ml (1 cup) oil 250ml (1 cup) hot cof­fee

Syrup:

500ml (2 cups) boil­ing wa­ter 100g (½ cup) brown sugar 30ml (2 ta­ble­spoons) cocoa pow­der 5ml (1 tea­spoon) vanilla essence Milk choco­late for top­ping, op­tional

IN­STRUC­TIONS

Pre­heat oven to 180°C. Grease a deep 2 litre oven­proof oven dish. Mix to­gether choco­late cake mix, eggs, oil and hot cof­fee. Spoon mix­ture into pre­pared bak­ing dish and smooth the top.

Make the syrup by mix­ing to­gether boil­ing wa­ter, sugar, cocoa and vanilla. Stir un­til sugar has dis­solved. Pour syrup over dough, bake in oven for 45 min­utes. Sprin­kle with grated choco­late if de­sired.

Serve hot with whipped cream or vanilla ice cream. Dec­o­rate with fresh straw­ber­ries.
