CHICKEN WRAPS & TZATZIKI

Makes 4 IN­GRE­DI­ENTS

■ 4 chicken breast fil­lets

■ 15ml (1 ta­ble­spoon) ca­jun spice

■ 5ml (1 tea­spoon) mixed dry herbs

■ 45ml (3 ta­ble­spoons) oil

■ 4 pitas

■ 1 red pep­per, thinly sliced

■ ½ red onion, thinly sliced

■ let­tuce

■ feta cheese

Tzatziki sauce:

■ ½ english cu­cum­ber, finely diced

■ 250ml (1 cup) plain yo­gurt

■ 20ml (4 tea­spoons) minced gar­lic

■ 45ml (3 ta­ble­spoons) chopped fresh dill

■ juice of ½ medium le­mon

■ salt and freshly ground black

■ pep­per, to taste

IN­STRUC­TIONS

Pound chicken breasts lightly to flat­ten. Sea­son with ca­jun spice and herbs. Heat oil in a fry­ing pan and fry chicken over medium heat for 5-6 min­utes on each side. Cut into strips.

For the tsatziki: mix all in­gre­di­ents to­gether in a bowl. Cover and chill un­til ready to serve. If de­sired, puree the in­gre­di­ents in a blender for a smooth sauce.

To serve: Lay pitas on a clean sur­face. Ar­range let­tuce, chicken strips, red pep­per strips and onions on the pitas. Top with tzatziki sauce and crum­bled feta. Fold pita over like a sand­wich, us­ing a string to keep it to­gether.

A pita is a Greek­style flat-bread you can find at al­most any su­per­mar­ket.
