CHICKEN WRAPS & TZATZIKI
Makes 4 INGREDIENTS
■ 4 chicken breast fillets
■ 15ml (1 tablespoon) cajun spice
■ 5ml (1 teaspoon) mixed dry herbs
■ 45ml (3 tablespoons) oil
■ 4 pitas
■ 1 red pepper, thinly sliced
■ ½ red onion, thinly sliced
■ feta cheese
■ ½ english cucumber, finely diced
■ 250ml (1 cup) plain yogurt
■ 20ml (4 teaspoons) minced garlic
■ 45ml (3 tablespoons) chopped fresh dill
■ juice of ½ medium lemon
■ salt and freshly ground black
■ pepper, to taste
Pound chicken breasts lightly to flatten. Season with cajun spice and herbs. Heat oil in a frying pan and fry chicken over medium heat for 5-6 minutes on each side. Cut into strips.
For the tsatziki: mix all ingredients together in a bowl. Cover and chill until ready to serve. If desired, puree the ingredients in a blender for a smooth sauce.
To serve: Lay pitas on a clean surface. Arrange lettuce, chicken strips, red pepper strips and onions on the pitas. Top with tzatziki sauce and crumbled feta. Fold pita over like a sandwich, using a string to keep it together.
A pita is a Greekstyle flat-bread you can find at almost any supermarket.
