Serves: 4 IN­GRE­DI­ENTS

■ 200g (1 cup) su­gar

■ 250ml (1 cup) wa­ter

■ 2 cups fresh straw­ber­ries, sliced in half

■ 375ml (1 ½ cups) fresh lemon juice (about 6 lemons)

■ 1,5l (6 cups) cold wa­ter or sparkling wa­ter

■ Ice cubes

■ Ex­tra sliced straw­ber­ries, for gar­nish


In a small saucepan, bring ¾ cup su­gar and wa­ter to a boil. Re­move from heat and let cool to room tem­per­a­ture.

Mean­while pre-heat oven to 200°C. Place sliced straw­ber­ries onto a bak­ing sheet lined with bak­ing pa­per, sprin­kle with the re­main­ing ¼ cup su­gar.

Toss well and roast for 1020 min­utes, un­til soft and bub­bly. Trans­fer straw­ber­ries into a bowl and mash with a fork. You can also use a food pro­ces­sor, blend un­til smooth.

Pour the pureed roasted straw­ber­ries into the su­gar wa­ter. Add lemon juice and stir well.

Pour strawberry lemon mix­ture and cold wa­ter or sparkling wa­ter into a large jug, stir well, add ice cubes and half of the ex­tra strawberry slices. Pour into glasses, gar­nish with re­main­ing strawberry slices and mint sprigs.
