Prawn fries (SFH style)

2kg prawns

8 cups (2 litres) wa­ter

1 onion, chopped

Olive oil for fry­ing

Salt and freshly ground black

pep­per

2tsp (10ml) chopped pars­ley

1 cup (250ml) milk

1 cup (250ml) cake flour

3 egg yolks Plunge the prawns into boil­ing salt wa­ter for 5 min­utes or un­til their shells turn pink.

Re­move, re­fresh in cold wa­ter and drain.

Re­move the heads and peel and chop the prawn meat into small pieces.

Fry the onion in the olive oil un­til soft (should you wish, you can add 2 crushed chill­ies when fry­ing the onions) add half the prawn meat and fry for 5 min­utes.

Trans­fer to blender with salt, pep­per and pars­ley and blend every­thing to­gether un­til smooth.

Re­turn the blended mix­ture to the heat and add the milk.

When it be­gins to boil, grad­u­ally add the flour (1 tbsp. (15ml) at a time) un­til you ob­tain creamy, bat­ter­like con­sis­tency

Add the re­main­ing prawns and the egg yolks to the bat­ter

Drop tea­spoon­fuls of bat­ter into hot oil and deep-fry for about 5 min­utes un­til golden brown.
