Prawn fries (SFH style)
8 cups (2 litres) water
1 onion, chopped
Olive oil for frying
Salt and freshly ground black
2tsp (10ml) chopped parsley
1 cup (250ml) milk
1 cup (250ml) cake flour
3 egg yolks Plunge the prawns into boiling salt water for 5 minutes or until their shells turn pink.
Remove, refresh in cold water and drain.
Remove the heads and peel and chop the prawn meat into small pieces.
Fry the onion in the olive oil until soft (should you wish, you can add 2 crushed chillies when frying the onions) add half the prawn meat and fry for 5 minutes.
Transfer to blender with salt, pepper and parsley and blend everything together until smooth.
Return the blended mixture to the heat and add the milk.
When it begins to boil, gradually add the flour (1 tbsp. (15ml) at a time) until you obtain creamy, batterlike consistency
Add the remaining prawns and the egg yolks to the batter
Drop teaspoonfuls of batter into hot oil and deep-fry for about 5 minutes until golden brown.
