BEETROOT is a powerhouse of gut-healthy fibre and antioxidants. The amino acid, glutamine, that is abundant in beetroot, assists in maintaining a healthy digestive tract.
8 medium beetroot, washed, topped and tailed, then quartered ½ tsp chilli flakes (dried chilli) 2 cups vegetable stock, or chicken broth salt to taste ¼ cup coconut cream for garnishing (optional)
Coconut Dukah to garnish
Add all the ingredients, apart from the coconut cream and dukah, to a soup pot and bring to the boil, then reduce the heat and allow to simmer for approximately 1 hour.
Take the pot off the heat, allow to cool for 5 minutes, and then blitz to a silky smooth consistency with your hand blender.
Serve with a swirl of coconut cream and a sprinkling of crunchy Coconut Dukah. Serves 2.
