Beet­root Bliss

BEET­ROOT is a pow­er­house of gut-healthy fi­bre and an­tiox­i­dants. The amino acid, glu­tamine, that is abun­dant in beet­root, as­sists in main­tain­ing a healthy di­ges­tive tract.

8 medium beet­root, washed, topped and tailed, then quar­tered ½ tsp chilli flakes (dried chilli) 2 cups veg­etable stock, or chicken broth salt to taste ¼ cup co­conut cream for gar­nish­ing (op­tional)

Co­conut Dukah to gar­nish

Add all the in­gre­di­ents, apart from the co­conut cream and dukah, to a soup pot and bring to the boil, then re­duce the heat and al­low to sim­mer for ap­prox­i­mately 1 hour.

Take the pot off the heat, al­low to cool for 5 min­utes, and then blitz to a silky smooth con­sis­tency with your hand blender.

Serve with a swirl of co­conut cream and a sprin­kling of crunchy Co­conut Dukah. Serves 2.
