Dessert: Isi­jingi with Nn­duhu and dried peaches

But­ter­nut 400g, peeled and cubed

Maize meal 120ml

Cream 250ml

Cin­na­mon 2.5ml

But­ter 15g

Brown sugar 400ml

Dried peaches 50g

Nn­duhu (mixed nuts) 60g

Method

Cook the but­ter­nut in wa­ter with sugar and cin­na­mon. Let it cook un­til it is soft enough to mash, re­serve the wa­ter, cool, then purée. Add maize meal to the purée and leave to cook for about 5 min­utes. Af­ter 5 min­utes stir un­til well mixed, add the cream and but­ter then cook for 2 min­utes.

While wait­ing for the mix­ture to cook, chop the nuts and dried peaches, make syrup and pour on the nuts mix­ture. Leave to cool, then top the dessert with the nut mix­ture when serv­ing.
