Giving a fudge about the festive holidays

Saturday Star - - NEWS - CHANTEL MANNING

THE RICH, sweet taste of fudge from my childhood still lives on today. I was always busy experimenting in the kitchen with all the delightful flavours of simple childfriendly food. Cooking has a way of bringing everyone together in the kitchen, chatting, enjoying life and creating memories. This is a very old recipe my grandma and I use to make for the Christmas holidays: Easy Meals for Busy People 2 cups Castor Sugar 1 Tin Condensed Milk 2 tbsp Golden Syrup 1/4 cup Water 4 tbsp Butter 1 tsp Vanilla Method Place the sugar and water into a pot. Stir over low heat until sugar is dissolved. Add butter, syrup and condensed milk. Keep stirring. Simmer over a low heat until fudge mixture becomes a dark caramel colour. (Approximately 25 minutes.)

Remove from the stove, add vanilla and beat until it thickens. Pour into a greased pan, allow to cool. Cut into squares once cooled.
